The most common product Chicago pizzerias carry is giardiniera made with soybean oil. We source our giardiniera from J.P. Graziano which is made exclusively with Extra-Virgin Olive Oil.
The only oils or fats of any kind that enter our kitchen are oils extracted from olives or avocados making us 100% seed-oil free. Our dough is made with generous amounts of avocado oil before going through a 4 day cold fermentation process.
